Striper Con Salsa Verde
(STRIPER WITH GREEN SAUCE)

Ingredients

Striper Filets
Chicken Stock or Broth
Flour or Corn Starch
White Wine
Salt
Pepper
White Onion
Garlic
Fresh Parley Leafs
Jalapeno Pepper
Olive Oil

Recipe

Take a rather large sauté pan and cover the bottom with Olive Oil.  Heat oil then place chopped white onion, chopped Jalapeño pepper, chopped garlic, salt and pepper and sauté until the onions and pepper are soft.  Add chicken stock and a cup of wine, bring to a boil then reduce heat and simmer for 5 minutes.  Take a cup and put some chicken stock and two heaping tablespoons of flour or corn starch and mix thoroughly.  Once the flour or corn starch is blended well into the stock, pour the contents into the pan and mix until the sauce starts to thicken.  Place a cup of chopped parsley into the pan and mix.  When the contents turns a nice light green color, place the Striper filets into the pan and cook four minutes on each side making sure to be careful when turning the filets, not to break them.  When finished, place the fish over a bed of rice and pour the green sauce over the fish.
