Snow Goose Gumboe

Ingredients

3-4 Snow Geese (Breasts and Legs)

1 Cup Red Bell Pepper

1 Cup Green Bell Pepper
3 Celery Stalks
4 Jalapeno Peppers
4 Red Chili Peppers
1 Cup White Onion
2-3 cloves of chopped Garlic
4-6 Fresh Parsley Sprigs
1 oz. of Red Hot Sauce
1/2 tsp. Cayenne Pepper
1 tsp. each Salt/Pepper
1 tsp. of Wildside Seasoning
1 Cup of Flour
½ Cup of Red Wine
½ Cup Olive Oil
2 Qts. Chicken Stock

Recipe

Start by cutting Goose Breast into cubes and place in a plate with the whole legs and thighs.  Heat 1 cup of olive oil in a large kettle or Dutch Oven.  Add the Snow Goose to hot oil and brown.  Remove the Goose from the skillet and set aside.  Add flour a little bit at a time and stir slowly until the whole cup of flour is in the oil.  Stir for about 15 minutes to make a golden brown rue.  Add Red Peppers, Green Peppers, Celery, Jalapeno Peppers, Red Chili Peppers, Garlic, White Onion, and Fresh Parsley and cook until soft.  Once the vegetables are soft, add salt, pepper, cayenne pepper, hot sauce and Wildside Seasonings.  Bring to a boil.  Add the two quarts of Chicken Stock and Red Wine.  Stir contents until mixed thoroughly, bring to a boil once again and reduce heat to low.  Add the goose and simmer for three hours stirring about every 20-30 minutes.  Serve over rice with fresh bread.
